Vermicelli

Recipe for Vermicelli Kitchdi :

Items required – 2 cups of Kavin Roasted Vermicelli, 1 tsp Channa Dhal & Urad Dhal, 1/4" tsp Mustard seeds, 2 tsp Cashew nuts, 2 tsp pea nuts, 1 onion, 2 green chilies, 1/4" ginger, ¼ cup green peas, 1 carrot, 1 tomato, 4 cup water, 3 tblsp oil, 2 tsp ghee, curry leaves, salt to taste.

Method – chop the onions, chilies, ginger, tomatoes, carrots into small pieces and keep aside, heat oil in a pan and add channa, urad, mustard and curry leaves, when they start to crackle, add pea nuts and cashew nuts, fry till they turn golden brown. Now add carrot and fry for 3-4 minutes, and then add chilies, onions, peas and tomatoes, cook until they are done.

After that add salt and 4 cups of water, cover with a lid and let it boil, when water starts boiling add KAVIN Roasted Vermicelli and simultaneously stir ( so that no lumps will be formed) cover the kitchdi with a lid for 5-6 min and then add 2 tsp of ghee and stir well, serve hot with coconut chutney or ketchup.
